Ginger-Tomato Chicken

My hubby loves chicken meat very much. He can take chicken rice everyday if he got nothing to do for the whole week. Anyway, he is siao I tell you, I will rather eat Maggie Mee than chicken everyday.

I found another way of cooking chicken now, hopefully I am able to try it during one of the weekend.
Here are the ingredients needed for the recipe:
* Skinless chicken drumsticks and/or thighs
* Diced tomatoes in cans
* 2 tablespoons quick-cooking tapioca
* 1 tablespoon grated fresh ginger
* 1 tablespoon parsley
* 4 cloves garlic, minced
* some crushed red pepper & salt
Method to do:
Place chicken in a 3-1/2- or 4-quart slow cooker. Drain one can of the tomatoes. In a medium bowl, combine drained and undrained tomatoes, the tapioca, ginger, the 1 tablespoon cilantro, the garlic, crushed red pepper, and salt. Pour over chicken in slow cooker. Cook till meat become tender. Done!
As simple as it is!
